I used to be an apprentice sushi chef. One of my first kitchen skills was washing rice and cooking it for sushi.
The three Japanese chefs are very strict about washing rice and cooking rice for sushi.
The rice MUST be washed until the water is clear.
Because rice flour will turn the rice yellowish over time, it will make the sushi rice a little sticky and less fluffy and round.
Ideal sushi rice
This sushi rice is incredibly delicious when eaten. You can taste every single grain of fluffy rice with a fresh aroma.
So, for sushi rice, it MUST be washed thoroughly. Otherwise, our intern teacher will spray it. lol.
If you're eating at home, just wash it once or twice to remove any rice dust.
