 I assume the questions asks about lead actresses of her time so not including the actresses after he switched to character roles.

Padmini Kolhapure- Amitabh and Padmini never worked together even though they came close to work together twice. Once, she was considered for the lead roles in Yash Chopra’s Silsila but Yash Chopra didn't liked the screen tests and he water the casting coup of Rekha and Jaya with Amitabh so Padmini was not cast. Secondly, she was supposed to work with Amitabh in Charlie but the film was shelved after Amitabh decided to cut his work after his accident on the sets of Coolie.

Anita Raj- Another prominent actress of 80s Amitabh never worked with. Anita Raj never got an opportunity to work with Amitabh as she barely worked in the Big budget films in lead roles apart from Dharmendra and Mithun starrers. Anita Raj was signed by the great makers Hrishikesh Mukherjee in the film Auqaat opposite Amitabh also starring Jayaprada. But the film was shelved after Amitabh’s accident.

Mandakini- By the time Mandakini made waves with Ram Teri Ganga Maili, Amitabh had entered politics. And when he returned Mandakini was deep into typical mass masala movies and lost her market very soon. Mandakini could never get the setup she got in her first film again.

Madhuri Dixit- Even though Madhuri Dixit entered films in 1984 she got success only in 1988 the year which marks the gradual decline of Bachchan with the failure of Ganga Jamuna Saraswati. Madhuri was supposed to work with Amitabh in Shinakht, Badhua and Rishta, but all the films were shelved and we could never see them together except for a song appearance in Bade Miyan Chote Miyan.

Sangeeta Bijlani- She is by and large known only for Tridev, and by the time she enter d bollywood Amitabh was on a gradual decline so again she couldn't work with Amitabh in his heydeys.

Even actresses like Poonam Dhillon and Neelam worked with him in sister daughter roles not in a lead role. Tinnu Anand rejected Poonam for Shahenshah because the role needed exposure and Poonam was baby faced. Yash Chopra also rejected Poonam after taking her audition for Silsila. Neelam worked with Amitabh in Agneepath as sister and Indrajith as his daughter. Sonam worked with Amitabh Bachchan in Ajooba but was not paired together. Karishma Kapoor and Raveena Tandon worked with Maitabh in Insnaiyat and Mrityudata, Tabu in Kohram but were not paired together. Shilpa Shirodkar, Deepak Sahi also worked with Amitabh in Hum but again not paired.

And then we have the curious case of Sudha Chandran who worked and didn't work with Amitabh. Amitabh and Shatrughn Sinha were signed for a film Yaar Meri Zindagi in 1971. But the film was shelved after some shooting. In the next few years Shatrughn Sinha became a star and Amitabh became a mega star. So the makers decided to revive the film but it kept postponing and by the time the shooting commenced again everyone left the film except Shatrughn Sinha. So the makers cast Sudha Chandran in late 80s to shoot new scenes while using stock footage to show Amitabh Bachchan and other actors. Amitabh Bachchan didn't work with Sudha Chandran didn't work together but in the film they had scenes together by editing and shadow shooting. The film eventually got a release in 2006, after 35 years.

 Amitabh was number 1 when Vinod Khanna left for Osho Ashram

and he was Number 1 even when Vinod Khanna made a comeback in 1987.

The ones who actually benefited from Vinod Khanna’s absence were Jeetendra and Mithun. Jeetendra was the number 2 star between 1980–84, Mithun was the number 2 star from 1985–88 and Anil Kapoor was the number two after 1988 till 90. After that it was one or another khan in the top 3.

In 1982 the 4 out of 10 highest-grosser films belonged to Amitabh (Namak Hallal, Khuddar, Shakti, Satte pe Satta), Vinod Khanna had Rajput, which earned 3.75 crores, but it was a multi starrer film and thus remained average. Jeetendra had Farz aur Kanoon which earned 4.5 crores, and Mithun became a breakout star with the global success of Disco Dancer.

1983–84 were the golden years of Jeetendra with his south remake hits like Himmatwala, Justice Chaudhary Mawali, Tohfa, Maqsad etc. Mithun emerged as the top star in 1985 with the blockbuster hit Pyar Jhukta Nahi along with his steady stream of hits. Amitabh Bachchan made his acting debut with the film Saat Hindustani (1969) directed by Khwaja Ahmed Abbas.

The film talks about the struggles of 7 young revolutionaries, with Utpal Dutt playing the lead role. Tinnu Anand was an industry insider courtesy his father Inder Raj Anand and therefore he often met Khwaja Ahmed Abbas in his office who used to give him a passing shot in his movies. Eventually he signed Tinu for a proper role in Saat Hindustani. At that time Khwaja Ahmed Abbas was looking for an actress for the film. He saw a photo of actress Neena Singh from Kolkata who agreed to do the film. It was Neena who suggested the name of Amitabh who was her acquaintance at Bird and Co. company. Khwaja Ahmed Abbas was reluctant and asked Amitabh to come for audition at his own expense in Mumbai (Amitabh was working in Kolkata) and wait for the audition. Tinnu Anand was supposed to play the role played by Amitabh Bachchan but he wanted to become a director and had applied to assist the great filmmaker Satyajit Ray. Before the shooting of Saat Hindustani started, Tinnu Anand received a letter from Satyajit Ray asking him to work with him as assistant. For that Tinnu Anand had to leave for Kolkata. Therefore he had to leave the film Saat Hindustani.

After Neena Singh suggested the name of Amitabh Bachchan who was struggling and desperate to work in movies and was an acquaintance of Rajiv Gandhi who gave him a recommendation letter (Indira Gandhi had become the PM of the country by this time). It was Tinnu Anand who was given the task of offering Rs 5000 to Amitabh for the film. Even though the amount was too low he still accepted it to work in the film. He eventually won a National Special award for this film and the film itself won 3 National awards even though it was not commercially succesful. Interestingly Neena Singh who suggested Amitabh’s movie didn't report for the shooting and was replaced by Shernaaz who was Jalal Agha’s sister who also played one of the roles in the film. Interestingly Shernaaz married Tinnu Anand soon.
