- Kathi Rolls – Kolkata’s famous flaky paratha wraps stuffed with kebabs, egg, or paneer.
- Chole Bhature – Delhi and Punjab style. Huge fluffy bhature with spicy chole and pickles.
- Pav Bhaji – Mumbai’s buttery mashed vegetable curry with toasted pav. Best enjoyed late at night on the streets.
- Dabeli – Gujarat’s sweet-spicy potato burger packed with peanuts, pomegranate, and chutneys.
- Litti Chokha – Bihar’s smoky traditional street food made with roasted wheat balls and mashed vegetables.
